Under the organic label from Domaine Fouassier (the largest landholder in Sancerre). Domaine Fouassier is one of the oldest continuously operating estates in Sancerre.
François le Saint Sancerre 'Silex' comes from 25-year-old vines. The grapes are de-stemmed and taken to the pneumatic press on a conveyor belt in order to avoid damaging the fruit. Work in the winery respects the lunar calendar. The wine is naturally vinified using indigenous yeasts.
Tasting: Rich nose with notes of ripe pear and apple, citrus zest and spice. Rich palate combining fat and freshness. Remarkable aromatic and emotional intensity. Dense, rich and very persistent finish. An outstanding wine!
