The grapes for this wine were selectively whole berry picked and fermented in 1000L cubes and French barriques. Partial wild and malolactic fermentation, together with tie on yeast, have added complexity and structure.
Margaret River is a great region for Chardonnay. This is displayed as a combination of richness and intensity of fruit, elegant structure, and a balanced acidity.
This is a very complex wine, with an impressive fruit core. Primary characters are: peach, nectarine, grapefruit peel and vanilla, layered with secondary savoury notes from yeast autolysis and a touch of hazelnut and cashew with French oak overtones on the finish. This is supported by a creamy structure and a tight fruit driven length.
